Turkey Roulade

This recipe is a longstanding one passed down from my grandfather, and modified over time for ~flavor~
Ingredients !
:: For the Dough ::
Water , 1 c
Eggs , 1-2 ct
AP Flour , ~4 c (enough to combine)
EVOO , 1 T
Salt , 1 t
:: For the Filling ::
Potatoes , 3 ct , Large Diced
Onions , 1 ct , Julienned
Cheese , As Needed
Scallions , 1 ct , Sliced
Butter , 2 T
Salt , To Taste
Procedure !
[1] Combine all of the dough ingredients and form into a ball
[2] Boil the potatoes in salted water until fork tender, while waiting--caramelize the onions and get a head start on the dough by separating it into little balls before rolling them out as thin as one can reasonably get
[3] Drain and mash the potatoes, mix in the rest of the filling ingredients
[4] Continue rolling out the dough, once done, fill each one with roughly a spoonful of filling, fold the dough over it and seal the edges, set aside the amount desired and freeze the rest for later
[5] Boil the verenikas in salted water until al dente, it'll take longer than one would expect (trust)
